New Norcia Olive Oil

The Olive Tree has been associated with the Benedictine Monks of New Norcia since the original grove was established in the 1850’s and 1860’s. New Norcia is still famous for its olive oil (which was awarded a medal at the 1908 Franco-British Exhibition in London). More than 600 trees are harvested annually and some of the original machinery still used to sort and process the olives. Availability is seasonal and depending on harvest. New Norcia Bakeries

New Norcia Bakeries is a private company, which operates under an agreement with the Benedictine Community of New Norcia.
In 1993, New Norcia Bakeries was granted permission to use the original wood-fired oven at the monastery (installed in 1886) to produce authentic artisan breads. In 1996, another 100 year old wood-fired oven in the Perth suburb of Mount Hawthorn was located and recommissioned. With the two ovens working in tandem to produce a range of breads, pastries, biscuits and cakes, New Norcia Bakeries soon established a reputation as Western Australia’s finest artisan bakers.
Delicious products baked in the monastery’s 100 year old wood-fired oven include New Norcia Nut Cake, Pan Chocolatti, Almond Biscotti and bread baked seven days a week.
Please note, the Bakery at New Norcia is not open to the public.

New Norcia Wines & Ports
Along with the olive groves, vines were one of the first things planted by New Norcia’s founder Rosendo Salvado. However, his successor, Bishop Torres, concentrated his efforts at Wyening. Wine production increased and became more professional with the building of a stone winery at Wyening from 1914-1916.
In 1916, 80 acres were under vines and in 1917 the first non-monastic vigneron was employed. Benedictine Abbey Wines then enjoyed their golden era with the employment of Gustel Schwarzbach, an Austrian. Mr Schwarzbach was winemaker at Wyening for almost 25 years and produced a full range of wines and spirits. With Mr Schwarzbach’s advancing years and a rising salinity problem it was decided to close the vineyard and winery, with the last vintage bottled in 1973.
It was thought then that New Norcia had seen the last of wine production but a little over 30 years later wine production recommenced with the help of wine maker Nick Humphry. Nick, a Perth optometrist, has operated Bindoon Estate for many years. The New Norcia Abbey Shiraz, Cabernet Merlot and Chardonnay are made from grapes grown at Nick’s Bindoon Estate located 50 kilometres south of New Norcia. The fruit is transported to Jane Brook Winery Wines in the Swan Valley where it is made into wine. The New Norcia Abbey wines are the only ones made exclusively from Nick’s fruit. Once bottled, it travels to New Norcia where it is matured in the ancient cool wine cellars under the monastery.

New Norcia Abbey Ale

Abbey Ale is traditional monastic ale, golden in colour, blessed with scents of fruit and spice, with a delicate champagne-like finish balanced with just a hint of bitterness. The ale is brewed at the Malt Shovel Brewery in Camperdown, NSW and shipped to WA for aging in the cool cellars beneath the monastery at New Norcia.
New Norcia Abbey Ale is available exclusively on tap at New Norcia Hotel and for sale from selected outlets nationally.
